D and Grandma's Mini Sausage Rolls
Makes 108
6 sheets of puff pastry
1 kg of sausage mince
4 grated carrots
1 and a half diced onions
2 packets french onion soup mix
2/3 tub of tomato paste
1/2 cup tomato sauce
1/3 cup HP sauce
2 tsp onion powder
2 tsp garlic granules
2 tsp thyme
pepper
1 egg lightly beaten (to brush on top)
Preheat oven to 200 degrees. Lay out pastry sheets to thaw with damp dish towel over the top to avoid drying out. Line oven trays with baking paper. In a large bowl, mix all other ingredients except for egg.
Once pasty sheets have thawed, take one and roll it out onto a floured board. Cut pastry sheet into thirds. Using a spoon, place sausage mixture in a line along the long edge of one of the thirds of pastry. Roll the sheet up, making sure the mixture is contained inside the pastry. Pinch either end to seal, and use a fork to make 6 punctures along the length of the sausage roll. Cut the roll into 6 smaller pieces and place on lined oven tray. Brush with egg.
Repeat until all pastry sheets and sausage roll mix is used. Bake for 20-25 minutes until golden brown.
Taste: My darling Grandma is a big believer in using Foodland sausage mince and Black and Gold pastry to make these, although I used Coles brand for both which gave them a slightly different taste than I was used to. The sausage mixture was tasty, although perhaps could use a few other flavours but a little less onion. The pastry was light and fluffy, which HTC preferred, although I must admit to guiltily having a preference for the oilyness of the Black and Gold pastry ;) But they were certainly moreish and tasted really good!
Texture:The pastry wasn't quite as flaky as I would like, but all in all they were crispy on the outside and lovely and moist in the middle.
Changes for next time:Even though HTC preferred it, i think I would go back to the Black and Gold Pastry. I did initially start the oven off at 180 which was a little low, 200 degrees ended up being perfect. I would perhaps put a little more tomato sauce in next time, I didn't this time cause we ran out.
New Skills:Nothing major I can think of really, apart from maybe having the confidence to make something without an actual recipe for once!!
