
I love the ease of Bill Granger's recipes, this one is from 'Bill's Food', I have made it a few times and it always works out.
Simple Scones
Makes 8
1 tbsp icing sugar
310g plain flour
310g plain flour
1 1/2 tbsp baking powder
pinch of salt
250ml milk
30g butter melted
Jam and whipped cream to serve
Preheat oven to 220C. Sift the icing sugar, flour, baking powder and salt into a bowl. Add the milk and butter and stir to combine with a knife. Knead quickly and lightly until smooth and then press out onto a floured surface.
Use a glass to cut out rounds of roughly 5cm in diameter and 3cm deep and place them close together on a greased baking tray. Gather the scraps together, lightly knead again, then cut out more rounds. Cook for 8 to 10 minutes, until puffed and golden. Serve with jam and lightly whipped cream.
